This recipe calls for 1 pound of pork, because in 2026 who can even afford beef. 4 cups of chopped Kale and Chard. and I substitute the bread crumbs for oats, whole grains , gluten free and cholesterol reduction for the win.
I also use 2 eggs to really make sure it stays together.
Sometimes I substitute out the Mediterranean seasonings like thyme, feta and oregano for Asian ones like Miso, soy sauce, ginger and sesame seeds. Then I make sauce for the top by whisking Ketchup and soy sauce.
My elementary school kids regularly request this dish and eat seconds.

We're pretty informal at the farm so we just say Spaghetti Sauce or Red Sauce but we are also huge fans of this sauce.
Now the trick with adding Kale to your spaghetti sauce is to chop it fine. My partner chops it very fine so that it essentially looks like there's lots of herbs in the sauce. It doesn't change the taste but you do get your leafy greens.
Use your slow cooker or Instapot so this sauce is ready for you in the evening.

Veggie Mashed Potatoes (ColCannon) 🥔🥔
This is exactly the upgrade your mashed potatoes need.
I know the Irish are genius. They just made delicious mashed potatoes and added some chopped kale. Those green onions in the recipes can also be leek greens. Pssst the leek greens are better!
